i looked around the web and i got a few ideas

United Nations Environment Programme
a source of ideas that we could look  at to create useful maps
Global Environment Outlook
a source of ideas that we could look at to create useful maps
Toxic Release Inventory Maps in ESRI
some shape maps from the TRI that that could be apart of our maps
Environmental GIS Maps of the World
looks like a good source for maps that may be able to aid us in our project
US Geodata
many potential data source ideas and information that can help us create our own maps
PlanetHazard
PlanetHazard uses information from the EPA to map Top Ten Polluters, All Polluters,

List Pollutants
